SERVES 6

Breakfast potatoes are perfect for meal planning. My whole family loves them because we can each add a twist to leftovers. You can enjoy them on their own or add your favorite breakfast protein; I’ll even eat them cold. Try adding a poached or fried egg, bacon, sausage, smoked salmon, or sautéed vegetables. Turn leftovers into a hearty dinner by baking them into a casserole.

DAIRY-FREE, GLUTEN-FREE, NUT-FREE, UNDER 30 MINUTES, VEGAN

PREP TIME: 10 minutes

TOTAL COOK TIME: 15 minutes

AIR CRISP: 15 minutes at 400°F

ACCESSORIES: Cook & Crisp™ basket

PREP TIP: To reheat leftover potatoes so they retain their crispiness, place them in the Cook & Crisp™ basket in your Ninja® Foodi™, select AIR CRISP, set the temperature to 375°F, and set the time to 5 minutes.

STORAGE: Store in airtight containers in the refrigerator for up to 4 days or in the freezer for up to 2 months.

1 tablespoon extra-virgin olive oil

4 large baking potatoes, cut into small cubes

2 garlic cloves, minced

1 tablespoon chopped fresh rosemary

½ teaspoon kosher salt

¼ teaspoon freshly ground black pepper

1. Insert the Cook & Crisp™ basket in the pot of your Ninja® Foodi™ and close the crisping lid. Select AIR CRISP, set the temperature to 375°F, and set the time to 5 minutes. Select START/STOP to begin preheating.

2. Meanwhile, in a large bowl, toss together the olive oil, potatoes, garlic, and rosemary until the potatoes are well coated. Season with the salt and pepper.

3. When the Foodi™ has finished preheating, open the crisping lid and gently place the potatoes in the basket.

4. Close the crisping lid. Select AIR CRISP, set the temperature to 400°F, and set the time to 15 minutes. Select START/STOP to begin. After 8 minutes, open the lid and use a wooden spoon to gently toss the potatoes, moving the potatoes on the bottom to the top for even crisping. Close the lid to resume cooking for the remaining 7 minutes.

5. When cooking is complete, check the potatoes for your desired crispiness. Remove the potatoes from the basket and let them cool to room temperature. Divide the potatoes among individual containers, label, and refrigerate or freeze.
